Carrot cake and ‘little bit of Monica in me”
We have grown up with healthy doses of the popular sitcom “Friends”. I identify with Monica a lot in terms of cooking and baking and playing hostess. I call it the “ little bit of Monica in me”. Because the other parts, particularly the being super organised bit…uh huh! That’s so not me 😉. Anyway, as I love to host people at my house, I always seem to have a cake baking in the oven, every other day. Coming up with new and exciting flavours and combos for my cakes is a fun challenge. This post is about my Carrot and Mixed Berries Tea Cake which turned out to be a super hit!
In order to cut down on the guilt associated with having too much cream and butter, I mostly try to make no frills tea cakes that can be enjoyed with the evening cuppa. The special cakes, with the icing and all is reserved for birthdays and special occasions.
I will share with you how to make a carrot cake from scratch. This is a carrot cake without frosting, so it goes well with tea.
Ingredients
2 brown eggs
1 cup organic brown sugar (75 gm)
