Chocolate Beetroot Marble Cake

I am planning to write a new recipe book. Tentatively I have thought of calling it the 100 Cake Book. So for that first I have to bake 100 cakes. I will include those recipes in a series of posts called ” Cake Series”. That is my new self set challenge. There is a supplementary challenge to it also. I have to try to maintain my weight after eating all that delicious cake!! I guess that challenge deserves a totally separate series of posts by itself.

Of oxymorons and more

Even though it’s a bit if an oxymoron to utter the words cake and healthy together in a sentence. But nevertheless, I try to add at least one healthy component in my cakes. I added carrots in my last cake. Todays addition is the bright red beetroot. What is life without a bit of change?

Joy of Baking

Recently I baked chocolate muffins for my friends niece, an adorable 3 year old. My friend sent me a photo next day. The little one was enjoying the muffin. And after eating it she claimed that she wants to come to my house just to let me know that the muffin was tasty. This is what I call a good feedback. My sister also sent me a cake related message that made my day. Read it in the picture below.

Back to my chocolate beetroot marble cake recipe.


Ingredients

2 eggs

Brown sugar ½ cup

Curd 2 tbsp

Vanilla extract

Butter 50 gm melted

Flour 1 ½ cup (150gm)

Oats flour ½ cup

Pink salt ½ tsp

Baking pd 1 ½ tsp

Cocoa pd 3 , 3 tbsp hot water, 1 tbsp brown sugar

Grated beetroot 1 small

Sunflower oil 50 ml

Roasted crushed walnuts

Greased and paper lined loaf tin

Bake at 180 degree celsius for 30 mins
