Eggless Orange Cake Recipe
But since maa had asked for it, I had to bake it. I had some fresh oranges in my fridge. So I baked an eggless orange loaf cake which was enjoyed by them.
The main challenge in an eggless cake is substituting for the eggs. Eggs due to their protein content in both the yolk and the whites, help to give the cake its structure. The protein coagulates during the baking process and combines with the starch in the flour to form the cake crumb. So the main challenge is in substituting the protein in eggless cakes. In this recipe, I have taken the help of milk proteins to give my cake structure.
Ingredients
1/2 cup buttermilk
1 cup Condensed Milk( 100gm)
1/2 cup melted butter( 50 gm)
Orange Essence few drops
1.5 cups All purpose Flour/ Organic maida ( 150 gm)
1 cup Milk powder(100gm)
2 tsp Baking powder
½ tsp Pink Salt
Roasted crushed cashews(optional)
Method
Method
Add melted butter and oil and beat.
Beat in the buttermilk.
Sieve in the flour,milk powder, cocoa,salt and baking powder.
Mix gently by cut and fold method.
Add in the orange juice and orange essence.
Mix well and add roasted cashews(optional)
Pour into a lined and greased cake tin
Bake at 180 degree celsius for 40 minutes or till done.

- Beat condensed milk till it is frothy.
- Add melted butter and oil and beat.
- Beat in the buttermilk.
- Sieve in the flour,milk powder, cocoa,salt and baking powder.
- Mix gently by cut and fold method.
- Add in the orange juice and orange essence.
- Mix well.
- Mix in roasted cashews(optional)
- Pour into a lined and greased cake tin
- Bake at 180 degree celsius for 40 minutes or till done.
