We were just back from a trip and there were exactly 6 tomatoes and a few green chillies in my fridge. The hubby asked me ” so what are we going to have for dinner?” I announced grandly that we are going to enjoy delicious and healthy roasted tomato soup!

The poor darling was not feeling very well. So I thought he needed something hot and nutritious as well as tasty. And added to that was the additional challenge of a nearly empty pantry!


I used 4 tomatoes, 4 to 5 cloves of garlic, 2 green chillis, a dash of olive oil and salt and pepper for the seasoning. Thats it!

The easy healthy roasted tomato soup with only 4 major ingredients turned out to be perfect and tasted superb with toasted brown bread from a local favourite bakery.

Ingredients:

  1. Ripe tomatoes = 4 ( cut into slices)
  2. Garlic Pods = 4
  3. Green Chilli = 2
  4. Olive Oil = 2 tsp
  5. Rock Salt/ Salt
  6. Black Pepper
  7. Water 200 ml(or as required)

Method:

  • Start by cutting the tomatoes into slices and place them on a baking tray.
  • Peel the garlic pods and place in between the tomato slices.
  • Slit the green chillies and place on the tray.
  • Spread the olive oil in a thin film on the tomatoes.
  • Pre-heat the oven to 200 °C.
  • Place the baking tray in the pre-heated oven and roast for 20 to 30 minutes or till the tomatoes are soft and just starting to caramelise.
  • Remove from oven and cool for for 10 minutes.
  • Then place the roasted tomatoes, garlics,chillies and salt in a mixer / juicer container and blitz till smooth. Add warm water to bring the soup to your desired consistency.

  • Serve the soup warm with a dash of olive oil or butter and season with rock salt and black pepper according to taste.
