Almonds are a favourite snack in our house just second to walnut in popularity.
I love to use them in my baked goodies , shakes, smoothies or simple as a mid-morning snack.
The Goodness of Almonds
Almonds are the quintessential superfood. They are a powerhouse of nutrients having a multitude of health benefits together with being super tasty. Almonds are loaded with antioxidants and are great for skin, hair. They help to prevent unhealthy snacking and all in all make you feel great.

I usually soak them in water the night before. This is to get rid of phytic acid present in the skin of almonds which inhibits absorption of nutrients.
In many of the Instgram profiles and food blogs, I see people using almond milk in many of their recipes. This inspired me big time! For the longest time I wanted to taste almond milk. But I was wary of the store bought variety which are chock-a-block full of artificial ingredients and preservatives. So my quest for easy homemade almond milk recipe began!
Easy Almond Milk Recipe
I started by soaking 15 to 20 almonds in water. If you forget beforehand then a quick-fix method is to use boiling water for the soaking. You have softened and soaked almonds ready to use within 20 minutes!
The next step is to take the soaked almonds in a mixie jar and blitz them up. After powdering the almond add the water(about 2 cups i.e 200 ml) and blitz for 5 to 6 minutes. You will see the almond powder and water will make a milky white emulsion. Strain the almond milk through a muslin cloth or a fine tea strainer . And Voila! You now have yummy almond milk and almond meal ready.
How to use Almond Milk
The almond milk can be used in smoothies, with muesli or enjoyed by itself. It is great for people who are lactose intolerant or allergic to dairy. The almond meal can be dried and used in cookies, cakes or breads. Almond flour is a great gluten free and vegan option for baking! Nothing goes to waste.
And the best part is when I made this almond milk I was satisfied in my knowledge that I did not end up feeding my body loads of preservatives and artificial ingredients that ultimately do more harm than good!
P.S It is best to store Almonds in the refrigerator as if the fat in them may go rancid due to heat. So always store almonds and other nuts in a cool place.

Love almonds (unfortunately my weakness is chocolate covered ones), and occasionally use store-bought almond milk in my smoothies, but you’ve inspired me to have a go at making my own!
Surely you should try homemade almond milk. Its super easy. I too love the occasional chocolate covered almonds!
Almonds are also a cholesterol lowering food- you know that BAD cholesterol LDL (ugh)……..In fact, you have me going to my fridge (where I have been keeping my almonds the last week- thanks to your blog I learned I am doing the right things without even knowing why- until NOW!) Thank you!

I love using almond flour in my gluten-free bread. I also use it when a recipe calls for nuts, because my daughter doesn’t like nuts, but if I use almond flour she gets the health benefits and doesn’t notice.
