A Loaf Cake is a big hit in our household. My sister let me know a few days back that my blog does not have any recipe for a decadent chocolate cake. That was quiet shocking as I am a chocoholic of the highest degree.
So I frantically went through my gallery and Instagram feed to find this recipe for a dark chocolate loaf cake with ganache icing that I baked a few months back. This dark chocolate loaf cake is special in the sense that I made this for a dear friends birthday.
What is a Loaf cake made of?
Like most cakes, a loaf cake is made of four basic ingredients, flour, butter,eggs and sugar. It is called a loaf because of the elongated loaf tin in which the cake batter is baked in.
Ingredients for Dark Chocolate Loaf
1 cup raw organic sugar (100 gm)
1 cup Melted Butter (100gm)
2 tbsp Buttermilk/Curd
Vanilla Extract 1.5 tsp
1cups All purpose Flour/ Organic maida ( 100 gm)
½ cup Milk powder(50gm)
½ cup Cocoa powder (50 gm)
1 ½ tsp Baking powder
½ tsp Pink Salt
40gm Melted Dark Chocolate
Ganache Ingredients
Dark Chocolate 100gm
Butter 25gm
Milk/Cream 2bsp
Method
Add 75ml of the melted butter
Sieve in the flour,milk powder, cocoa,salt and baking powder.
Mix gently by cut and fold method.
Add in the melted dark chocolate, buttermilk and remaining melted butter.
Mix well.
Pour into a lined and greased cake mould.
Bake at 180 degree celsius for 30 minutes.
For the Ganache Icing:
Melt dark chocolate and butter either un a microwave (Several intervals of 30 secs) or by double broiler method. Add in the milk/ cream and mix until thick and shiny. Cool in the fridge before icing the cooled down cake.

- Beat 3 eggs with 1 cup organic raw sugar until frothy and thick.
- Add 75ml of the melted butter
- Sieve in the flour,milk powder, cocoa,salt and baking powder.
- Mix gently by cut and fold method.
- Add in the melted dark chocolate, buttermilk and remaining melted butter.
- Mix well.
- Pour into a lined and greased cake mould.
- Bake at 180 degree celsius for 30 minutes.
- For the Ganache Icing:
- Melt dark chocolate and butter either un a microwave (Several intervals of 30 secs) or by double broiler method. Add in the milk/ cream and mix until thick and shiny.
