Baked Mini cheesecake

As the Marvelous Mrs Maisel once said during a strenuous pilates session….
“Q: Why do we exercise?
A: So we can eat cheesecake! “
But cheesecake can create real havoc with your waist line. So the best way is eat baked mini cheesecake which you just pop into your mouth and it’s over! I topped these baked mini cheesecakes with fresh and tangy strawberries which was a delicious addition.

When I baked these mini cheesecakes, it was a particularly trying time for us healthwise. We were at a very low point of our lives filled with uncertainty and anxiety. These mini bites of heaven helped to alleviate the stress and sadness to some extent. Creating baked delights helps me destress and gives a outlet for my pent up creative energy.

The year 2024, since January itself has been full of challenge and trials for us. One of the most difficult phase of our lives you can say. In between the dark gloomy days, sweet treats such as these really helped us row ashore.

Baked Mini Cheesecake

Ingredients

  • For the crust

  • Digestive biscuits 8 to 10

  • Butter 50 gms

  • Brown Sugar powdered 60 gms

  • For the filling

  • Cream cheese 100 gm

  • Hung Curd 100 gm

  • Egg 1 big

  • Salt ¼ tap

  • Vanilla extract

  • Lemon juice and zest

Directions

  • Method
  • Grind the digestive biscuits to a coarse powder
  • Add in the butter and powdered sugar
  • Make a coarse mixture with wet sand like texture.
  • Press the mixture into cupcake molds and pierce with a fork.
  • Bake at 180 degree celcius for 10 minutes.
  • Meanwhile, beat together the hung Curd, cream cheese, sugar, salt, Vanilla extract, lemon juice and lemon zest.
  • When the prebaked moulds are done, spoon in the cheese filling and tap gently to let out any air
  • Bake the mini cheesecakes at 180 degrees for 20 to 30 minutes.
  • The cheesecakes will be a bit jiggly when you take it out of the oven but don’t worry, it will set as it cools down.
  • 10.Once cooled, topped with sliced strawberries or any fruits of your choice and enjoy!
