Veggie Lentil Soup Recipe
Lentils or Dal is a staple in our household. My husband and brother in law are both avid dal lovers and need their lentils with every meal. So you can imagine the sheer necessity to come up with different versions of the same base ingredients to keep our meals as exciting as ever!
What is Lentils Soup made of?
You can make Lentil soup with any available lentils or dal. In this recipe I have use red Lentil i.e masur dal and split chickpea Lentil i.e chana dal.
Is Lentil Soup good for you?
Lentil soup a.k.a dal is one of the healthiest item that you can include in your everyday meals. Loaded with fibre, makes you full and super tasty!
Should lentils be soaked before making soup?
Definitely lentils have to be washed and soaked preferably overnight.
Why should you soaked lentils?
Lentils need to be soaked to break down the phytic acid/anti- nutrients in the other layer which inhibits absorption of nutrients. Also time taken to cook lentils is cut down to a great extent by soaking.
Now back to my veggie lentil soup recipe. I came up with this one when my husband was very ill a few days back. My only goal at that point of time was to bring him back to the pink of his health a.s a.p!! So I was added as many seasonal vegetables as I could manage into my soup. You can vary the veggies according to your liking though.
Ingredients
Chana dal ,Masur dal (1/2 cup each soaked overnight)
½ tsp butter
1 tbsp grated Ginger
2 cloves garlic
1 Grated beetroot
1 Squash and carrot diced
Chopped Chinese mustard/ lai saag leaves (you can use any greens)
Salt, sugar to taste.
Method
Pressure Cook the lentils with a pinch of salt till soft. It took 10 whistles for my lentils to soften.
In a pan add the butter, Ginger and garlic. Fry till light brown.
Add the vegetables except the green leaves Fry at high flame for a few minutes.
Add in boiled lentils, Salt and sugar to taste.
Cover and simmer in a low flame.
When everything looks combined add the steamed and blanched chinese mustard leaves.
Bring to a boil and simmer till combined.
Serve hot with steamed rice or bread.
